Vegetarian Meatballs [Gluten-Free & Dairy-Free]

these meatballs have made quarantine life pretty tasty, and they have over 18,000 views on tiktok randomly so….

here’s the recipe:


2 cans black beans

1 heaping tbsp tomato paste (optional)

1/4 – 1/2 medium onion, diced

1/4 cup toasted walnuts, chopped

1 egg

1-2 tbsp coconut flour or almond flour

1 tsp cumin

1 tsp garlic powder

1/2 tsp chili powder

1 tsp kosher salt

1-2 tbsp nutritional yeast


preheat oven to 375ยบ and line a baking sheet with parchment paper.

drain and rinse black beans. add to food processor, and process until black beans are a paste. it’s okay if some beans are just chopped up, but it should be a mushy consistency, for the most part. add your walnuts and process until they’re chopped up finely.

if your food processor is small, transfer to a bowl. if your food processor is large, then keep in there!

add your egg, tomato paste, onion and all of your seasonings. process or stir until combined.

mix in 1 tbsp coconut flour. the mixture will be sticky, but if you feel like it’s too sticky, then you can sprinkle some more coconut flour in. don’t add too much though! this stuff will absorb a lot of liquid, quickly, and will result in a dry meatball. (if you’re using almond flour, you can use a bit more; it’s not as absorbent)

roll into balls. if you want to measure, use a tablespoon and make each meatball a heaping tablespoon.

line them up on the baking sheet and drizzle with olive oil.

bake for 25-30 minutes. serve with warm tomato sauce and pesto, if you have! i also topped them with garlic “bread” crumbs, which i made with almond flour. do you want that recipe???
