Paleo Banana Bread [no added sugar]

helloooooooo. how’s everyone doing? i’m definitely not losing my mind being cooped up in brooklyn 24/7 [heh….]. anyway, i’ve been trying to not eat like an asshole during these times of social distancing, so when emmett asked me to use up the three over-ripe bananas in some sort of a sweet baked good [aka banana bread], i decided to get creative.

i have to admit, i was extremely skeptical of all of the paleo banana bread recipes i was seeing online. are they actually tasty? does the texture resemble real banana bread, or are they weirdly spongey?

and something i noticed was that a lot of the recipes [basically all of them] include some sort of added “paleo” sweetener, whether that’s honey, maple syrup or coconut sugar. when i make paleo baked goods, i try to only use fruit as the sweetener to keep it as clean as possible. i feel like those “paleo” sweeteners are straight up empty calories, and i’d like to avoid that.

so i decided to move forward with just using over-ripe bananas and 2 medjool dates as the only sugar sources. i was a little nervous that this would yield a not-sweet-enough and overall nasty banana bread, but i was wrong. this paleo banana bread is legit and tastes f*cking amazing, and i will be making it once a week.

okay enough chit chatting!! here is the recipe.


3 [very] over-ripe bananas. mine were like… half brown, half yellow

1 1/2 teaspoons vanilla extract

1/4 cup natural peanut butter [no added sugar]

2 eggs

1/2 cup coconut flour

1/2 teaspoon cinnamon

3/4 teaspoon baking soda

1/4 teaspoon salt

1/3 cup toasted walnuts

2 medjool dates, chopped


grease either a large cast iron pan or a 9×5 baking dish with coconut oil and line the bottom with parchment paper. i used a cast iron pan because #quarantine and #atmyboyfriend’sapartment. and preheat your oven to 350ΒΊ.

mash up bananas with a fork until smooth. whisk in vanilla and peanut butter by hand until smooth. whisk in eggs, one at a time, until smooth. whisk in salt, cinnamon and baking soda. whisk in coconut flour until just combined. fold in chopped walnuts. add chopped dates [they’re super sticky, so you need to add them piece by piece, otherwise it’ll just be one large chunk of date pieces] and fold them in.

pour batter into your cast iron or baking dish. top with more walnuts or dates, if you’d like. bake for 25-35 minutes. i ended up baking it for 32 minutes πŸ™‚

let cool for ~20 min and then enjoy!! it’s so good. let me know in the comments if you make it πŸ™‚
